Coconut Lime Overnight Oats

This (vegan) breakfast is really quick to throw together and prepare the night before. The lime is refreshing and zingy and cut through the creaminess of the coconut cream beautifully.

Serves 2


  • 2ooml cold water
  • 3 tbsp coconut cream
  • 160g porridge oats
  • 1/2 tbsp raw honey
  • 1 tbsp toasted desiccated coconut
  • grated juice & zest of 1 lime
  • pumpkin seeds (to garnish)


Simply combine all the ingredients above (except the pumpkin seeds) and mix well. Set aside a small amount of lime zest to use in the morning as garnish with the pumpkin seeds
