After seeing Lovin Dublin’s recent post about Guinness sausages it reminded me of how much I love Guinness treacle brown bread. I’ve taken the high road however and opted for these boozey chocolate treats instead! The signature malt taste of Guinness goes fantastically with dark chocolate.
- 200g butter
- 300g golden castor sugar
- 2 eggs, lightly beaten
- 300g plain flour
- 1 tsp baking powder
- 1 1/2 tbsp custard powder
- 2 tbsp cocoa powder
- 150 ml Guinness
- 125g dark chocolate, broken into small pieces
Preheat fan oven to 185°, line a 12×10 baking tin with parchment paper
Using an electric mixer, beat the golden caster sugar and butter together until pale and fluffy
Add the eggs gradually a small amount at a time. Next add the Guinness. This mixture should be very liquidy.
Combine all the dry ingredients – the flour, custard powder, baking powder and cocoa powder. Fold this into the wet mixture until fully combined. Lastly add the pieces of broken chocolate.
Pour the mixture into the lined baking tin and bake in preheated oven for 30 minutes or until an inserted skewer comes out clean.
